Title: Chicken and Fruit Salad

Yield: 6 Servings

3cChicken; cooked, diced
1cCelery; sliced
2tbGreen onion; chopped
2tbCapers
1tsSalt
2tbLemon juice
8 1/4ozPineapple tidbits; drained
11ozMandarin orange sections; drained
1/2cAlmonds, slivered; toasted
1/2cMayonnaise
1/2tsLemon peel; grated
  Salad greens

Combine chicken, celery, green onion, capers, salt, and lemon juice. Cover and chill for several hours. Just before serving, add pineapple, orange sections (reserve a few for garnish), and almonds.

Combine mayonnaise and lemon peel; carefully fold into chicken mixture. Spoon into a bowl lined with salad greens. Garnish with reserved orange sections.
